Green Eggs

Want a healthy yet interesting breakfast for a Sunday morning? Then these eggs are perfect. Try them for yourself or seve them with smoked salmon for brunch with friends.

Serves: one to as many as you like

Preperation time: 2 minutes

Cooking time: 5 minutes

Ingredients

Per person:

- 2 eggs
- 1/4 cup low fat milk
- 1 tsp basil, chopped
- Canola or olive spray oil

Method

1. Mix eggs, milk and basil in bowl
2. Spray oil in pan and heat
3. Add egg mixture and cook on medium heat
4. Stir occasionally until eggs are no longer runny
5. Serve on multigrain toast

ENJOY!

Try substituting basil with dill and serve with smoked salmon.
For extra flavour try adding 1 tsp of parsley or 2 tbs of low fat grated cheese
