Quick and Easy Foil Fish

There are many health benefits of eating fish twice a week. The long chain omega 3's in fish helps to reduce cholesterol. So for good heart health eat fish twice a week! Here is a tasty, quick and easy fish recipe for you to enjoy. It can easily be a single serve or feed the whole family. Great for a healthy yet tasty treat at your next dinner party. Why go out for dinner when this dish can be prepared so easily at home!

For this recipe use any white fillet of fish. Serves 4

Preparation time = 5-10 minutes

Cooking time = 25 minutes

Ingredients

4 white fillets of fish (approx. 125g per fillet)
4 teaspoons sweet chilli sauce
4 teaspoons coriander (fresh or try Garden Gourmet's herb tubes)
4 teaspoons basil (fresh or try Garden Gourmet's herb tubes)
1 lemon
2 carrots, julienned
1 bunch asparagus or brocolini
1 zucchini, julienned
1 red pepper, julienned
4 piece of foil (enough to wrap around each fish fillet)

 

Method

1. Preheat oven to 180 degrees
2. Lay each piece of foil out on clean bench
3. Top foil with piece of fish
4. Top each piece of fish with 1 tsp sweet chilli sauce, basil, coriander and squeeze of lemon juice and spread across fish with a knife
5. Top fish with a variety of vegetables
6. Firmly wrap foil around fish and place on baking tray
7. Cook in oven for 25 minutes
8. Serve on a bed of brown or basmati rice with a side salad

ENJOY!

You can use any vegetables you like. Try including broccoli or snow peas. Or place fish on a bed of spinach or bok choy.
